Central Otago’s fresh nights are well suited to the production of sparkling wine. Using Akarua’s hand harvested Pinot and Chardonnay fruit, winemaker Matt Connell has produced an elegant aperitif-style wine with floral, savoury and bread dough aromas. Creamy middle with a long crisp finish and matches well with delicately flavoured seafood sashimi.
